Much vaunted Indian fusion venue (formerly The Ambrette) by chef-patron Dev Biswal, showcasing the best of the abundant sustainable, hyper-local local produce, with high levels of originality, flare and deft spicing. Regularly changing seasonal menus.
Biswal was educated in Calcutta and trained at the Dubai Sheraton, before moving to London for spells at Mangoes and Eriki. He was offered a partnershp in The Indian Princess in Margate in December 2006, becoming patron in 2010, revolutionising the menu, closing early to avoid post pub drunks and rebranding as The Ambrette.
The new name pays homage to the character of apprentice Perkyn Revelour, in Geoffrey Chaucer’s C14th ‘Canterbury Tales’ anthology, who is “rather fond of wine, women and song”.
Dev also gives cookery masterclasses and runs tailored ‘culinary pilgrimages’, visiting small producers and taking in the local area’s scenic countryside. His culinary tours have gone international with intineries to Croatia, Morroco and his native Odissa in India.
