Housed inside a beautifully restored 1900 original fire station, offering an air of sophisticated atmosphere with elegant hanging florals and warm lantern lighting
Owner-chef Ajay Kumar raids the abundant Scottish larder to bring authentic Indian flavours and ancient cooking techniques of “smoke, fire, texture, aroma, fermentation, preservation, spice layering, and storytelling,” to fine local produce, fish and game.
Chef Kumar deploys his grandmother’s recipes for chutneys, marinades, fermented pickles, seasonal drinks, and slow-cooked preparations, to great effect.
Recommended dishes: Calcutta Pork Chilli Fry, Glenfehie Pigeon, Konkani Halibut, Roe Deer Korma, Chettinad Duck, Gulab Jamun Rabr.
